Culinary Zurich

Zurich is a veritable mecca for epicureans with something to satisfy every palate.

Zurich is a culinary hotspot for all foodies, gourmets and epicures. The locals love discovering new trends and reproducing exotic dishes as authentically as possible. Of course, classics such as “Züri Gschnätzlets” also feature on many menus. Consequently, in Zurich there is something to please every palate.

Adrian Gerny is the only professional fisherman in the City of Zurich. Naturally you can enjoy his freshly caught fish in numerous Zurich restaurants.
Such as in the form of “Fisch-Chnusperli” (battered fish pieces), which are particularly tasty at the Restaurant Kiosk or at Fischers Fritz.

“Fisch -Chnusperli”

For 4 people

Preparation time: approx. 40 minutes
Preheat oven to 60 °C (140 °F)

100 g (3½ oz) of flour
½ tsp of salt
150 ml (5 fl oz) of beer
1 tbsp of oil
1 egg yolk
1 egg white, stiffly beaten
600 g (1½ lb) of perch or whitefish fillets
Peanut oil for deep frying

TARTAR SAUCE

1 cup of mayonnaise
2 pickled gherkins, chopped
1 shallot, chopped
4 tbsp of parsley, chopped
1 lemon, grated zest only

Weekly Markets

Lovers of good food will find fresh local produce and specialties from Zurich and region at the various weekly markets.

Birchermüesli is a true Zurich dish. It was originally created by Zurich physician Max Bircher for his patients. Today, it is popular all over the world.
Two brothers have revived a traditional Swiss specialty – the gingerbread Biber. Nowadays, Leibacher Biber are sold in many stores.

50 g (2 oz) of rolled oats, fine
35 g (1 oz) of rolled spelt
150 ml (5 fl oz) of orange juice
250 g (9 oz) of sour milk with bifidus
50 g (2 oz) of pear syrup
200 g (7 oz) of fresh berries, mixed
1 apple
1 banana, ripe
70 ml (2½ fl oz) of cream
Fresh fruit as desired for the topping

“Zürcher Geschnetzeltes“

For 4 people

Preparation time: approx. 30 minutes
Preheat oven to 60 °C (140 °F)

800 g (1¾ lb) veal fillet, cut into finger-wide strips
Salt and pepper to season the meat
1 tbsp of butter
1 to 2 shallots, finely chopped
1 tbsp of butter
100 g (3½ oz) of mushrooms (white and brown), sliced
1 tbsp of flour
100 ml (3½ fl oz) of white wine (dry)
150 ml (5 fl oz) of stock
100 ml (3½ fl oz) of demi-glace
150 ml (5 fl oz) of cream
Salt, pepper, cayenne pepper, a little cognac (optional)
